Chocolate Chip Cookies (gluten- and dairy-free!!)
Chocolate chip cookies are a classic treat and will make an absolutely wonderful gift. Use your family's favorite recipe or try a new one. These are Wheat Free Chocolate Chip Cookies from Veganomicon.I am super excited about this recipe because it is gluten-free* and dairy-free. (These are just for you Miss Jordan!). They are also egg-free and if you don't add nuts, then nut-free too. They are awesome for people with multiple food allergies and/or intolerances. And everyone else too, because they are really yummy and have a great crunchy yet chewy texture!The holidays can be especially challenging for people with food allergies and intolerances. If you have someone in your life who has allergies or intolerances to gluten, egg, nuts and/or dairy, give them this cookie mix, share the recipe or make a batch of cookies for them, so that they may enjoy a little extra bit of sweetness this holiday season!These cookies are gluten-free because the recipe uses oat flour, which makes them higher in fiber than other cookies. You get almost 2 grams of fiber per cookie, that's almost 10% of your daily minimum for fiber! If you don't love oatmeal cookies, don't worry, you'll still like these. The oat flour make the cookies reminiscent of classic oatmeal cookies, but oat flavor does not dominate the cookie. I added cinnamon, but if you omitted that spice I bet you wouldn't even think of oatmeal cookies.Chocolate Chip Cookies with Pecans from Veganomicon
- 1 glass jar (to hold about 3.5-4 cups), ribbons, note card, glue and a plastic baggie if you are making a gift, see below
- 1 3/4 cups oat flour* (make your own in a blender)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup brown sugar
- 1 teaspoon cinnamon, optional, I added this to the recipe
- 1/2 cup granulated sugar
- 1 tablespoon ground flaxseeds
- 3/4 cup chocolate chips
- 1/2 cup chopped pecans, optional, I added these to the recipe
- 1/4 cup soy milk
- 1/3 cup non-GMO canola oil
- 1 teaspoon pure vanilla extract
- If making a cookie jar gift, layer oat flour, then brown sugar, white sugar, baking soda, salt, cinnamon, flaxseeds, chocolate chips and then pecans. I ran out of room in my jar (I miscalculated the space i needed), so put the pecans in a baggie and tied it on. This is a good idea anyway because sometimes people don't like nuts in their cookies.
